Blueberry, Honeydew and Mango Salad with Lime-Ginger
Ingredients
- 1 cup Lime juice (Fresh)
- 1 pinch Salt (Table)
- 2 cup Honeydew melon (1/2 of small size, Seeds and peel removed, cut into 1-inch pieces)
- 1/4 cup Sugar (Grated)
- 1 tbsp Ginger (Fresh, peel and grated about a 1-inch piece)
- 1 tbsp Lemon juice (Fresh)
- 2 cup Mangoes (peeled and pitted, About 1/2 inch pieces)
- 1 Pint Blueberries (Fresh)
How to Make
- Take a non-reactive Pan of heavy base, Boil gently the lime juice, sugar, and salt on medium-high heat for about 15 minutes until thickened like syrup reduced to 1/4 cup of honey color.
- Remove the pan from the heat and mix the lime zest, ginger, and lemon juice.
- Let the mixture sit and steep for 5 minutes. Strain the mixture with a fine strainer.
- Mix the honeydew, mangoes, and blueberries in a medium bowl.
- Put the warm dressing over, mix and serve at room temperature or wrap it with plastic cover, refrigerate about 4 hours and served if you like chilled.
- Blueberry vinegar can also be used for dressing,
